Dinner last night was one of those simple, but glorious, popped-into-your-head dinners. I was laying on the couch thinking about what we had in the fridge, and thinking about how i did not want to eat more graham crackers and chicken soup, so i instructed the BF to make this tortilla zucchini pizza (!) :
Deeelicious. and ridiculously easy. He is such a good cook : )
The Tortilla Zucchini Pizza:
1 whole wheat tortilla from Trader Joes
1 zucchini
crumbled up goat cheese -TJs as well
1 whole onion
4-5 whole cloves of garlic, smashed up - bf smashed them with the side of a knife
olive oil
salt + paper to taste
pinch of garlic powder
heat a skillet with some olive oil, chop up the onion and saute it in the skillet on low temp until nice and carmalized (will get light brown), ad in the zucchini and saute a little longer until soft.
put a little olive oil on top of the tortilla, then pile on the sautéed veggies, the crumbled goat cheese, smashed garlic, and salt/pepper/garlic powder, and stick it under the broiler for about 10 min! Watch it though - it cooks quickly

my greenlicious dinner:
next to my 2 slices of pizza is a romaine salad with some cucumber, green pepper, baby carrots, and shredded chicken that bf made in the crock-pot thursday night. This chicken is great! It is SO EASY and is very versatile - you can cook it up one day and use it all week in soups, on sandwiches, on salads - anything! Will the post the recipe he used soon...
